The first distillery in Acadiana, Wildcat Distilling is the brainchild of Chief Distiller David Meaux and CEO Tait Martin, a pair of locals with strong Cajun roots and a love of quality rum. The two men can trace their ancestry to the French founders of the region (and of Cajun culture itself), who came to Louisiana after being exiled from Canada. Their cultural roots are also strongly tied to sugarcane production, which has been an essential part of the local economy for 200 years, and is the key ingredient in their rums.

   Inspired by the bounty of local resources and driven by curiosity and scientific spirit, David taught himself how to distill high quality French style rum, even building their first still from scratch. Their recipes have been passed down from generation to generation, making French style rum from 100% Louisiana fresh pressed raw sugar cane. The wood in which they use to make their Fifolet and Noire Rums comes from David’s family orchards.

Wildcat Brothers merges old-world recipes with modern techniques and local ingredients to create a fresh, new experience in rum.
