Wood Hat Spirits is a charming Bourbon and Whiskey distillery brimming with personality and passion for their craft. They are based in New Florence, Missouri, just west of St. Louis and in the heart of Missouri wine country. After many years working as an agronomist and woodturner, Bourbon connoisseur Gary Hinegardner began his eco-friendly distillery in 2012.

Worth noting that Missouri produces much of the corn and oak used in making Kentucky Bourbon, Gary rightfully believes that his home-grown spirits deserve a seat at the table. Wood Hat grows their own heirloom corn varieties in addition to working with local farmers, and as a result, they are able to breed corn for specific flavor profiles and mouthfeels. The types of corn–with names like Bloody Butcher and Hopi Blue–are more than fit for human consumption, and the mash after distillation is fed to happy animals on nearby farms.

Acting as a green distillery is a core principle at Wood Hat Spirits. They are perhaps the only producers using a wood-fired still, and use wood scraps from a nearby barrel stave as a source of heat during production. Likewise, a geothermal underground labyrinth of pipes and coils maintains proper temperature during production, while reducing energy expenditure. 

A true love of the land and integrity for production allows Wood Hat Spirits to stand out from the rest. Entirely locally made, their award-winning Bourbons, Whiskies, and Cordials are as unique as the Missouri-grown ingredients that make them.
