Himbrimi is a craft gin produced at Brunnur Distillery in Reykjavik, Iceland, founded by Icelandic artist Óskar Ericsson and CEO Junio Carchini. The concept began in 2013 when Ericsson started making a homemade gin to take on fly-fishing trips in the Icelandic wilderness — inspired by the wild herbs growing along the banks of rivers and lakes. The distillery was formally established in 2017, with Master Distiller Alba Hough overseeing production starting in 2021.
The name is the Icelandic word for the common loon (Gavia immer), a diving bird native to Iceland's lakes and coastline and a fixture of the country's river culture. Both expressions are distilled in small batches using locally foraged botanicals — Icelandic angelica and wild arctic thyme are the signatures — and geothermal water, a production detail that is specific to Iceland and genuinely contributes to the character of the spirit.
The lineup currently consists of two expressions. The Winterbird London Dry is clean and precisely structured — fresh citrus and angelica on the nose, a smooth and balanced palate with juniper, a whisper of arctic thyme, and a long finish. It earned a Gold Medal at the IWSC. The Old Tom leans into sweetness and complexity: organic juniper berries, wild arctic thyme, angelica flowers, and mountain honey produce a gin that is floral, bittersweet, and notably long on the palate — earthy and highland-inflected, built for sipping as much as mixing. It has received recognition as Worlds Best Compound at the World Gin Awards.
Himbrimi is also a certified B Corp, operating under a formal Triple Bottom Line framework.
