Saumur and its surrounding area is considered one of the great terroirs for Chenin Blanc and Cabernet Franc in the Loire Valley, and the world. Famous for its Tuffeau soil—soft, chalky limestone high in mineral content—these wines are elegant and fresh. Located in the heart of the Saumur-Champigny appellation, Domaine Fouet specializes in capturing the essence of this very terroir with the region’s star grape varieties. The domaine has been a family operation for 6 generations, organically farming their 20-hectare estate, and combining modern techniques with a deep respect for tradition. They have been certified in organic agriculture by Ecorcert since 2020. In addition to certified organic farming, they also practice eco-grazing. Among the vineyards, sheep are left to roam and graze, which naturally maintains cover crop between the rows, and allows for limited mechanical weeding.

The domaine has also planted apple trees among their vines, a practice called Vitiforestry which helps maintain healthy soils and encourages biodiversity among the vines. Domaine Fouet prunes extensively, preferring lower yields, and all harvesting is conducted manually. Vine age ranges from new plantings to older vines that can be upwards of 70 years old. In all there are 14 hectares of Cabernet Franc and only 6 hectares of Chenin Blanc, planted on the prestigious hill of Brézé.

In the cellar, the approach is one of minimalism. Winemaker Julien Fouet prefers a gentle touch and low-intervention technicques. He employs gentle pressing of grapes, and ages on fine lees to add texture and finesse. Fermentation is done with indigenous yeasts, and the wines are never filtered, with minimal sulfur added. Julien’s wines display a bright and fresh elegance, meant to be shared at the dinner table.
