Domaine du Jonchay is a young but sharply focused Beaujolais estate, founded in 2021 and driven by a clear, modern vision of Chénas. At the helm is winemaker André Sarton, whose hands-on, detail-oriented approach shapes every step—from the steep slopes of the vineyard to the quiet precision of the cellar.
The domaine farms just 3.27 hectares in Chénas, all on hillside parcels known as Les Pendrouilles—a local dialect term meaning “slope.” These four parcels—three at higher elevation and one traced by a small stream—bring natural freshness, structure, and tension, defining the wine’s core identity before it ever reaches the cellar.
In the cellar, André works with restraint and intention, carefully managing macerations with twice-daily cap work to express site and vintage without excess. The wine then rests for 12 months on lees, building depth, texture, and natural stability—no shortcuts, no heavy-handed intervention. Domaine du Jonchay operates at a truly human scale, guided by transparency, sustainability, and long-term vineyard health. Every decision—from vine to bottle—is about authenticity, balance, and letting the slopes do the talking.
