The Domaine Chollet is located in the commune of Pouilly-sur-Loire and extends over 10 hectares. Gilles Chollet, current owner and winemaker, took over from his father in 1989 and still farms the vineyard using traditional methods.  The south-west facing vines are planted on clay-limestone and sandy soil and allow the Sauvignon Blanc clusters and berries to achieve optimal ripeness while integrating the great minerality that the terroir of Pouilly is famous for. Gilles uses modern technology to refine the wine-making process. The wine is racked in December and rests on fine lees until bottling in April, producing an elegant, refined and age-worthy Sauvignon Blanc of great pedigree, among the best in Pouilly.
